Our objective being to guarantee an optimal grape quality, we have completely rethought the wine making process starting with the selection of the plants. Six hectares of specially selected Pinot Noir plants chosen for their low yield, mild vigour and their grape quality have been planted. In fact, our Pinot Noirs naturally offer low yields (400 g/m^2 instead of the allowed 800 g/m^2) and are composed in majority of small berries and loose grapes diminishing rot problems. Photosynthesis energy is concentrated in a restrained number of grapes encouraging quality.
